1 Hour Cranberry Orange Pecan Spelt Toasting Bread

Imagine, you have angels, real ANGELS, waiting for you to make them some bread cakes, what are you going to do? Sometimes you just don't want to wait three days for a loaf of sourdough, or even a few hours for quick yeasted bread, am I right? Well here ya go, this delicious toasting loaf can be whipped up in one hour, start to finish. The crumb is somewhere between a fruitcake, and a yeast bread. It is not sweet, other than from the cranberries, and is oh so healthy with 100% whole spelt. Which is good because I can't stop eating it!
So maybe you're not baking for actual angels, but that's okay, you deserve something yummy, healthy, and fast too!
I think if I sliced this thin enough and gave it another round in the oven it would make delicious crackers as well! I will be playing around with different flavors, and next time I make it I think I will use non-fat yogurt to see if I can get a bit of a better rise. But no complaints, this loaf is delicious as is!
The Emerald Wild Orange Oil is the secret ingredient to the depth of flavor with this one. You can use orange zest if you like, but I am so glad I was out of oranges, which caused me to reach for the Wild Orange oil! The flavor-while not overly citrusy, is beautifully subtle, mysterious, and bright!
