Easy Garden Zucchini Fritters

If you're like my hubby and I this time of year then you have more zucchini than you know what to do with. Here's a treat for you. One of the best things about this (besides how outrageously good they taste) is you can grate the zucchini and freeze it to make these fritters in the depths of Winter when you are missing that sweet warm taste of Summer. Easy Garden Zucchini Fritters
1 1/2 c grated zucchini
1/2 c fresh ricotta
1 egg
1/2 c all purpose flour
1/2 t baking powder
fresh grated nuymeg to taste
salt and pepper to taste
avocado oil for frying
thyme infused honey (optional)
grated parmesan (optional)
-Heat oil in cast iron skillet over medium heat.
-Mix all ingredients in small bowl.
-Drop by heaping Tablespoons into oil.
-Fry on each side for 3-4 minutes until golden brown and drain on paper towels.
-Sprinkle wit salt and drizzle with thyme honey and parmesan. Serve warm.
Makes 6 fritters or 2-3 servings.
Homemade Ricotta Cheese
1/2c milk (whole or 2%)
1T white vinegar
pink salt to taste
Simmer all ingredients for about 5 minutes until curds form, then strain off whey. Use immediately or store in fridge.
Makes 1/2 cup.
Thyme Infused Honey
-Mix 1T raw honey with a sprinkle of fresh or dried thyme.
-Melt together until drizzling consistency.
-Use immediately.
