Epic Irish Soda Bread (Spotted Dog)
The classic recipe, with an incredible twist!
2 cups AP flour
1 cup whole wheat flour
2 teaspoons baking soda
1 teaspoon baking powder
2 Packets Orange Greens
3 tablespoons sugar
½ teaspoon salt
1 pinch cream of tartar (to activate the soda!)
1-2 tablespoon caraway seeds (I like lots!)
½-¾ cup currants or chopped dried apricots
2 tablespoons butter , melted
2 eggs
1 cup sour cream
½ cup sour milk (to sour: add 1 tablespoon of vinegar, let sit for 5 minutes)
1 teaspoon orange blossom flower extract (optional, but it compliments and brightens the caraway so perfectly!)
powdered sugar for decorating (optional)
Directions:
1. Preheat oven to 350 degrees fahrenheit.
2. Grease and flour a pie plate or other round baking dish.
3. In large bowl, combine all dry ingredients, add currants and caraway.
4. In a separate bowl mix wet ingredients.
5. Pour wet ingredients into dry ingredients and mix with wooden spoon only til incorporated.
6. Flour hands then shape into dome in prepared baking pan.
7. Cut 1/4" deep X into top of loaf and bake for 50 minutes.
8. Let cool in pan for 15 minutes then remove and cool on rack.
9. Cover X using strips of waxed or other paper, then sprinkle entire top of loaf with powdered sugar.
Serve warm with Tangerine Honey Butter
Tangerine Honey Butter
1 stick salted butter
1 tablespoon honey
zest of 1 mineola or other large tangerine
1. Soften butter to room temp
2. Whip all ingredients together until incorporated
Butter will keep up to 1 week at room temp, or one month in refrigerator.
