Pumpkin Spice Tamales with Warm Roasted Poblano Vinagrette & Apple Tomatillo Pico
I am a Chicagoland girl through and through and there are two things that we are especially known for in the burbs that I live in, one is Pumpkin Farms and the other is Mexican Food! This recipe for Pumpkin Spice Tamales combines both. Years ago I fell in love with a pumpkin tamale from a little place called Two Lips Tamales and I have never thought about Mexican food the same. I have been making my version every Autumn since! I wait for these all year as you can see by my excited expression on the video still below. Lol
